You can actually reclaim your original horse, Pebbles! Travel to Semine in the south and speak with the horse trader. However, he won't simply hand her over. You'll need to either pay him with Groschen, or attempt to persuade or intimidate him into relinquishing Pebbles. My experience involved progressing through the main questline, working with Radovan the blacksmith. This allowed me to acquire new clothing, enhancing my appearance to resemble nobility. This helped convince the trader to release Pebbles without payment, although it did slightly impact my reputation in Semine. If persuasion fails, you'll need to pay the Groschen to get Pebbles back.
Alternatively, you can acquire a horse through less… legal means. While wild horses are rare, you'll find them on farms and in stables. Stealing one carries the risk of being caught by the owners.
I recommend visiting Vidlak Pond in the west. A farmhouse belonging to fishermen offers two horses ripe for the taking. Simply mount one and ride away.
Afterwards, head to the Nomads' Camp east of Vidlak Pond and speak with the horse trainer. He can teach you how to saddle and tame your newly acquired mount, though you will need to pay for his services. You can also choose to skip this step and ride the horse untamed.
